Pecorino grape is a white grape, proper of a colder climate and able to go through the last Spring frosts, it was originally cultivated in the country side of our province. The production was then almost forgotten due to the low productivity. The wine process is the usual one used for white wines (pressing, criomaceration, low temperature fermentation, maturation sur lie, bottling). The result is a well-structured wine, very particular and therefore it seems a Red wine dressed as a White wine.
